Eel

Het Vishuis prefers eels from small-scale farms from the Netherlands and abroad. They have the distinctive character of wild eel. After a subtle soak in a brine bath with sea salt, the eels are first air dried at length and then smoked over oak embers to which herbs and spices are added.
